Edinburgh Gin

Edinburgh Gin is a contemporary spirit that possesses a distinguished—and distinctly local—distilling heritage dating back to the late 18th century. In 1777, there were eight licensed distilleries and almost 400 illegal stills in Edinburgh and the Port of Leith. As gin rose to become the fashionable spirit, Edinburgh distillers, like their London counterparts, produced gin from locally sourced ingredients. Then juniper berries, spices and citrus fruits arrived daily in Leith from all over the world. These exotic ‘botanicals’ were redistilled or ‘rectified’ together with the finest Scottish grain spirit in the time honored fashion. Edinburgh Gin is a reminder of the days when Edinburgh was a center of distilling expertise.

Distilled via two methods—in a pot still named ‘Flora’ and a column still called ‘Caledonia’—Edinburgh Gin features 13 classic botanicals, including juniper berries, citrus peel and coriander seed. Edinburgh Gin’s Chief Distiller David Wilkinson next adds extra Scottish Juniper as well as heather and milk thistle. Edinburgh Gin’s clean citrus notes and aromatic juniper make it the perfect base for a Gin and Tonic or Martini, not to mention many of the classic gin cocktails.

Edinburgh Gin is produced in small-batch quantities ensuring that only the finest quality ingredients are used to produce a refreshing clean, crisp gin. At 43% ABV Edinburgh Gin is a multi-award winning spirit and an undisputed ode to the city in which it’s made. Its recipe is inspired by Edinburgh’s gin-making heritage and surrounding landscapes; in sum it is a premium gin at its very best.

The 1920s are known as gin’s truly golden era and in keeping with that theme the Edinburgh Gin packaging has an art deco feel that reflects this wonderful period of cocktail parties and drinking sophistication.

  • Edinburgh Gin

    Edinburgh Gin is a classic juniper forward gin back with wonderful citrus notes. Edinburgh Gin is batch distilled using two methods; a potstill and a column still. The stills are located in the brand new Edinburgh Gin distillery in the heart of the city. Partnering with the Heriot-Watt University in Scotland, this distillery offers the head distiller and grad student a platform to recreate old Scottish Gin recipes; such as Edinburgh Gin. After the traditional botanicals are used, they add an additional Scottish juniper as well as heather and pine.   • Cannonball Gin

    NAVY STRENGTH GIN
    Edinburgh Gin Cannonball is batch distilled using two methods; a traditional potstill named “Flora” and a column still named “Caledonia.” The stills are located in the brand new Edinburgh Gin distillery in the heart of the city. Partnering with the Heriot-Watt University in Scotland, this distillery offers the head distiller and grad student a platform to recreate old Scottish Gin recipes; such as Edinburgh Gin, and the latest specialty gin release, Edinburgh Gin Cannonball.

    BLAST FROM THE PAST
    A real blast from the past, this 57% ABV libation resurrects an old style of gin commissioned by the British Navy. Saying that, we have of course given it our own distinctive twist. Cannonball by name and by nature, this is one strong tipple and an intensely flavored treat for all your aficionados out there. Heady with unique botanicals, there’s a powerful kick of Szechuan pepper and double-strength juniper to balance out the (very) strong alcohol content!

    SHARED LEARNING PARTNERSHIP
    Edinburgh Gin has partnered with Heriot-Watt University, the UK’s only accredited distilling university. This partnership offers students a platform to learn the practical side of distilling.

    SEASIDE COLLABORATION
    Head distiller, Dave Wilkinson worked with the students to create this unique Seaside Gin which feature foraged botanicals including scurvy grass, ground ivy and bladderwrack seaweed. These are complemented with aromatic spice notes from grains of paradise, coriander and cardamom.

    INSPIRED BY NATIVE SHORES
    Boasting a collection of native Scottish botanicals foraged from the coastline, Seaside Gin is defined by juniper, soft minerality and sweet notes. This is the first of our collaborations through our partnership with Heriot-Watt University’s Brewing and Distilling MSc course.

Edinburgh's Christmas Gin is a limited edition, small-batch London Dry style gin taking influence from the ancient incense and spice routes. Warming Winter Spirit Evocative of the season of goodwill. Edinburgh Christmas Gin is batched distilled, located in the brand new Edinburgh Gin distillery in the heart of the city.

    Edinburgh's distillers have infused this gin with frankincense and myrrh to add a fragrant aroma, while a finishing note of nutmeg adds that yuletide warmth. Heady with rich aromatics including coriander, liquorice, cassia and zesty sweet orange Christmas Gin is enticing and alluring in equal measure.

    We recommend sipping our Christmas gin in a classic G&T with orange garnish, to release some of the gin’s more complex flavours and aromas. It also works perfectly in a festive Negroni, the sweet myrrh providing balance to Campari’s bitter finish. 43% ABV, London dry gin style.

Their base spirit is Edinburgh Gin—which is distilled via two methods, in a pot still named ‘Caledonia’ and a column still called ‘Flora—that is itself a blend of 13 classic botanicals, including juniper berries, citrus peel and coriander seed.

    The Edinburgh Elderflower Gin Liqueur has distinctive floral aromas and flavors that marry beautifully with gin botanicals. The summer’s elderflowers are handpicked in full bloom and then infused with the distillery’s classic Edinburgh Gin. The flowers are then left to macerate for a month for full flavor extraction.

    Tasting Notes This is a delicately balanced liqueur made using elderflowers and finished with a hint of lemon juice for a clean floral nose with hints of pear, peach and grapefruit zest.
